Jackfruit Kheer

We usually spend this time of the year in Mayapur, somehow, this year we were not so fortunate

During winters, in Mayapur, there is  Jackfruit and Date Jaggery available, which is known as Khejur Gur. This Jaggery is so tasty and enhances the flavor of anything it is added too.

You will need

  • Ripe jackfruit pieces - 12 pieces

  • Grated Jaggery - 1/2 cup ( If you have Khejur Gur, use that )

  • Coconut milk 1 1/2 cup

  • Water – 1/2-1 cup

  • Cashews - few

  • Roasted coconut pieces - 1 tbsp

  • Ghee – 2 tbsp

  • Salt – a pinch

  • Cardamon Pwd 1 tsp

  • few strands of Saffron

Method

Wash the jackfruit pieces, remove the seeds & brown colored skin.

Grind the jackfruit to a paste. Add some water while grinding but don’t worry even if its coarsely ground. It tastes good even if you have those pieces.


Now in a heavy bottom pan, add the ghee, roast the cashew and coconut pieces. Now add the jackfruit paste and roast for 8-10  mins, till you can't smell the rawness in the jackfruit. Now add the grated jaggery, stirring continuously, till melted.


Once the jaggery is all melted add in the coconut milk, cardamom powder, pinch of salt, saffron. Continue to stir while cooking.


Continue to cook for another 7-10 mins. Say a little prayer and enjoy his mercy!!

Variation:

You could replace the coconut milk, with regular milk if you like.

The sugarcane Jaggery with Date Jaggery.
