Savory protein packed lentil waffles

This wonderful recipe was inspired by Radhi Devlukia, I just played around with my favorite lentils and vegetables. Just yum! Feel free to use any vegetables you like.
These crispy waffles have a slightly nutty taste. They are completely guild free made with lentils, which has a good amount of protein and can give you a good amount of nutrition that will keep you full for longer. We call it feel-good food. Lentils are used a lot in India growing up it has been part of my everyday diet.

Makes 6
Ingredients
I/2 cup yellow split moong lentils ( soaked overnight)
I/2 cup green split moong lentils ( soaked overnight)
( you can use all yellow split moong lentils)
1/4 cup rice ( soaked overnight)
1 tbsp dried fenugreek leaves
1/2 cup grated carrots
1/2 cup grated Bottle gourd or Zucchini
1/2 tsp turmeric
1/8 tsp asafoetida
1 tsp garam masala
1 tsp salt
1/4 cup fresh coriander chopped
1/2 tsp baking soda
1/2 tbsp apple cider vinegar

Method
Wash and rinse the lentils and rice and soak overnight.
In a food processor, add the rice and lentils and grind till it forms a very fine batter. The batter should be thick and not runny.
Pour into a bowl and add the grated vegetables and spices.
Heat your waffle maker and once ready, add the apple cider vinegar and baking soda to the batter and mix and mix
Pour a ladle full of batter into your waffle maker, make sure you push the batter to all corners.
When your waffles are ready to serve, You can top the waffles with any dip you like, I made a herbed sour cream dip and garnished with some roasted cherry tomatoes.
